Vegan Brookies
If you’ve never heard of Brookies, they are a mix of brownies and cookies
Brownie on bottom, cookie dough on top.
These brookies are
Dairy free
Egg free
and sweetened with Coconut Sugar
Which makes these Brookies not as guilty as store bought ones.
Here’s what you’ll need:
For Brownie Batter:
1/3 cup of raw cacao
1/2 cup all-purpose flour (click here for the flour I use)
1 cup coconut sugar
1/4 cup of unsweetened oat milk
1/2 cup coconut oil (melted)
1 teaspoon vanilla extract
2 flax eggs (click here on how to make a flax egg)
1/4 teaspoon baking powder
Pinch of salt
For Cookie Batter:
1/2 cup of coconut oil (melted)
1/3 cup coconut sugar
1/3 cup cane sugar
1 flax egg (click here on how to make a flax egg)
1-1/4 cups all-purpose flour
1/2 cup semi-sweet chocolate chips (Dairy free)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon vanilla extract
Pinch of salt
Directions:
Preheat oven to 350
Make your flax eggs and set aside
Start brownie batter by, mixing dry ingredients in medium sized bowl
Then add, melted coconut oil, oat milk, vanilla extract, and flax egg (1)
Mix and set aside
In separate medium sized bowl, start cookie batter
Mix in coconut oil and sugars
Then add flax eggs (2) and mix
Add dry ingredients and mix, texture may be thick but that’s okay
Lastly, fold in chocolate chips
Oil 8x8 pan and pour brownie batter in first. Then, spread cookie dough batter on top.
Sprinkle cane sugar on top of brookie, then bake for 20-30 mins
Let Brookie cool before cutting
