Classic (Vegan) Peach Cobbler

Peach Cobbler was one of my favorite desserts growing up. So much, that I begged my mom to show me how to make it as a teenager. Years later after some failed attempts, I learned how to make a vegan version.

Now, I know peach cobbler is one of those things that can go one or two ways. Either you’re getting a thick, juicy cobbler or something similar to a peach pie.. with literally pie crust.

I guess I can blame my up bringing on my liking to cake-like cobbler

but honestly, I don’t think there’s any other way to make it.

Don’t get me wrong, both are good but if I wanted a peach pie I’d just make one.. you know?

This dish is a crowd pleaser, a classic, and super easy to make. Requires one bowl, minimal ingredients, and about 15 mins of prep time.

Here’s how you make it:

InGredients:

  • 1 cup of all purpose flour (click here for the one I use)

  • 1 cup of cane sugar

  • 1 can of unsweetened peaches or 1 & 1/12 cups of sliced peaches (if using fresh peaches, slice, sprinkle cane sugar on top, and let sit sit for about 30 mins. The longer, the better. This will help extract juices from the peaches for a better cobbler)

  • 1 cup of vegan heavy whipping cream or coconut milk

  • 1/2 cup of vegan butter

  • 2 teaspoons of baking powder

  • 1 teaspoon of vanilla

  • 1 teaspoon of salt

Directions:

  1. Preheat oven to 350

  2. Take an 8x8 pan, place stick of butter in pan, then place in the oven until it has melted.

  3. In large bowl — add flour, cane sugar, baking powder, salt, and combine.

  4. Then, add milk and vanilla. Mix until combined.

  5. Pour batter into pan with butter. This is how your cobbler crust will form, I start right in the middle to make sure the butter in evenly distributed over the batter.

  6. Next, pour your peaches in along with ALL of the juice. No particular way I do this, you are really just dumping everything in.

  7. Before placing in the oven, I like to sprinkle cane sugar over the top to enhance the taste of the crust. Sometimes I even sprinkle cinnamon but this is optional.

  8. Place in the oven and bake for 45-55 mins. This time may vary depending on your oven and altitude, so start checking your cobbler around 45 and add time as needed. Bake until golden brown.

  9. Let cool for 10 mins before serving.
